Hot Fruit Salad with Macaroons



Soft, baked fruits match perfectly with the crunchy macaroons, serve with some whipped cream on the side.

For the salad:
2 apples
2 pears
2 peaches
3 plums
3 oz pitted cherries
4 tbsp honey
2 tsp cinnamon
Zest of 0.5 orange

For the macaroons:
2 egg whites
2 oz coconut flakes
4 tbsp honey
1 oz ground almonds
1 tsp vanilla extract

1. Preheat the oven to 350 F.

2. Cut the apples, pears, peaches and plums into wedges. Mix together with the cherries, honey, cinnamon and zest.

3. Bake for 30 minutes while making the macaroons.

4. Whisk the egg whites until stiff.

5. Fold in the coconut, honey, almonds and vanilla.

6. Grease and line a baking sheet and space out tablespoons of the mixture on it.

7. Add to the oven for 10-15 minutes until golden brown and the fruit is soft.

Makes four servings.
Each serving has 393 calories.
