Rich and creamy as cheesecake, but much easier to make!
What you need:
1 1/4 cups oat or wheatmeal biscuits, crushed
1/4 cup ground macadamia nuts
1 teaspoon ground cinnamon
90 grams butter, melted
For the filling:
750 grams cream cheese, chopped
1 cup sugar
3 eggs
1 teaspoon vanilla extract
2 large or 3 medium mangoes
1/4 cup plain flour
whipped cream and toasted macadamia nuts for topping
What to do:
Preheat oven to 180ºC (350ºF). Line the base of a 9-inch springform pan with foil.
Combine crushed biscuits, nuts and cinnamon in a bowl. Blend in butter, mixing well. Press firmly into the base of prepared pan. Chill for 20 minutes until firm.
Make the filling: In a bowl, using an electric mixer, beat cream cheese and sugar together until smooth. Add eggs one a time, beating well after each addition. Mix in vanilla.
Chop half the mango (reserve remaining) and fold into cheese mixture with flour. Pour onto base. Bake for 45 to 50 minutes. Allow to cool. Top with remaining mango, cream and macadamias.
