The Paleo way to get your rice pudding fix. Give it a Greek twist by adding flavors of the Mediterranean.
1.5 oz chia seeds
16 oz coconut milk
4 tsp honey
3 tsp vanilla extract
2-3 tsp cinnamon
Zest of 1 lemon
Seeds from 1 pomegranate
1. Whisk together the chia seeds, milk, honey, vanilla, cinnamon and zest in a saucepan and leave to thicken for 20 minutes.
2. Cook on medium for 4-5 minutes, stirring constantly, until heated through.
3. Serve garnished with the pomegranate seeds, a sprinkle of cinnamon and fresh mint leaves.
Makes four servings.
