An original famous french dish, coq au vin is a traditional french recipe. Medium complexity , 2 hours cooking time.
Ingredients:
• 1 chicken ( at least 2 kgs )
• 180 gr of bacon ( preferably in brine not smoked )
• 20 chives cloves
• 4 small red onions
• 2 tablespoons of butter
• 3 tablespoons of flour
• 1 brandy glass
• 1 bottle of red dry wine
• 200 gr of mushrooms
• 1 clove of garlic
• 1 teaspoon of sugar
• a bit of thyme for taste
• 1 laurel leaf
• salt
• pepper
• nutmeg
• parsley
Step 1:
Cut the chicken into pieces. Cut the bacon into slices then fry them in a pan, on low heat with the chives.
Step 2:
When they are brown, remove the bacon with a slotted spoon and add the pieces of chicken. Allow the chicken to brown on low heat. Drizzle with brandy and flame it. Add the echalot , thyme , laurel leaf , garlic and the mushrooms. Cover them and let them simmer ( low heat ) for 20 minutes.
Step 3:
Meanwhile, place the bacon in another pan to reheat it , soften it with 3 quarters of the bottle of wine. If you use smoked bacon cook it for 2 minutes.
Step 4:
Increase the heat and when the wine starts boiling pour it over the chicken. Add wine until the pieces of meat are covered.
Step 5:
Add salt, pepper, sugar and nutmeg. Add the onion, cover again and leave it 30 minutes on low heat.
Step 6:
Meanwhile mix the butter with flour. Put the saucepan aside and add the butter, mix it, put it back on the cooker and boil it one more time.
Step 7:
SERVING: Coq au vin is served hot with chopped parsley. Serve accompanied by boiled potatoes or smothered fries. I know is hard to belive but this food is better the next day reheated
