
Serves 8 . Preparation time 20 minutes. Cooking time about 10 minutes.
10 chicken breasts
250 g bacon strips, cut in half
1/4 cup olive oil
5 tablespoons soya sauce (or Worcestershire sauce)
Filling 1
125 g cream cheese (or blue cheese)
5 preserved figs, sliced
Filling 2
10 olives, chopped
5 anchovy fillets, chopped
4 spring onions, chopped
2 tablespoons wholegrain mustard
2 tablespoons mayonnaise
• Slice each chicken breast in half laterally and flatten the pieces with a wine bottle. Then cut each flattened piece in two. (You should end up with 4 pieces per breast.)
• Prepare the fillings by combining the different ingredients. Scoop a teaspoon of filling onto each strip and roll it up. Wrap a piece of bacon around the chicken and secure it with a toothpick.
• Drizzle with olive oil and soya sauce and braai over medium-hot coals. Turn regularly until cooked.
