Chicken with Cheese

Serves 4

 4 chicken legs with thighs, cut into small pieces
 salt and pepper, to taste
 2 tablespoons cooking oil
 1 tablespoon crushed garlic
 1 cup water
 2 slices quick-melt cheese
 1/2-inch thick
 1 cup button mushrooms

Season chicken with salt and pepper.

In a large skillet, heat oil and sauté garlic. Add chicken and cook until the pieces turn light brown. Pour in water and bring to a boil. Lower heat and simmer until chicken is almost cooked, about 20 minutes.

Add the cheese and when melted, simmer for 5 to 10 minutes or until the sauce becomes slightly thickened. Stir in button mushrooms and cook for 2 more minutes. Adjust seasoning, if desired. Serve hot..


>>> Note: Add chicken gizzard, if desired, but be sure to boil gizzard until tender before adding to the pan.
