
Ingredients
1 tbs vegetable oil
1 onion, chopped
1 pepper, chopped
1 c white rice
1 14.5 oz can of diced tomatoes
1 c vegetable broth
2 tsp salt
1/2 - 1 tsp cayenne pepper
1 tsp oregano
1 green onion, chopped for garnish if desired
Instructions
Chop onion and pepper. Sautee onion and pepper. Add rice and sautee. Add tomatoes and vegetable broth, cayenne pepper, and oregano. Set Instant Pot on manual for eight minutes. Make sure the pressure valve is sealed. After cooking is done release the pressure valve to venting. Add green onion to garnish when served. Enjoy.
