
Makes 2 cups. Preparation time 5 minutes. Cooking time 20 minutes.
3 tablespoons olive oil
2 cups cherry tomatoes, halved
1 red or white onion, thinly sliced
4 tablespoons brown sugar
1 sprig each rosemary and thyme
2 cloves of garlic, crushed
pinch of paprika
1/2 cup tomato sauce
• Heat the olive oil in a pan and add the tomatoes and onion. Fry until soft and slightly charred.
• Add the sugar, herbs, garlic and paprika, and simmer the mixture for 10 minutes or until thick and fragrant.
• Stir the tomato sauce in.
• Spoon dollops of sauce onto some boerewors rolls.
