Not your run-of-the-mill stuffed mushrooms. These say “special” with leeks, garlic and dill. Also work brilliantly as a side dish for steaks.
4 portobello mushrooms
2 tbsp olive oil
2 leeks
3 garlic cloves
2 tbsp coconut butter
2 oz mixed seeds
1 tbsp dill
1. Preheat the oven to 400 F.
2. Remove the stalks and clean the inside of the mushrooms. Rub the oil all over them and bake for 10 minutes.
3. Slice and wash the leeks and garlic. Heat the butter in a pan and soften the leeks over a medium heat for 5-10 minutes, stirring regularly, until soft but not colored.
4. Stuff the mushrooms with the leeks, seeds and dill and bake for a further 5-10 minutes until hot and the mushrooms are soft.
Makes four servings.
