Almond banana bread recipe


Makes 1 loaf. Preparation time 10 minutes. Baking time 50 minutes.

This is my favourite banana bread Almonds tend to be expensive. Replace them with coconut for a less luxurio2 cups flourus occasion. To make a banana bread like the one pictured, add a spoon of instant coffee and decorate with caramel condensed milk and almonds.


125 g butter, softened
3/4 - 1 cup treacle sugar
2 tablespoons honey or maple-flavoured syrup
4 overripe bananas, mashed
2 eggs
1 teaspoon vanilla essence
1 teaspoon cinnamon
pinch of salt
100 g ground almonds or coconut
2 cups flour
1 teaspoon baking powder
3/4 teaspoon bicarbonate of soda
4 tablespoons warm milk


• Preheat the oven to 180 °C. Grease a 30 x 11 cm loaf tin.

• Cream the butter and sugar until smooth. Mix in the honey and mashed bananas.

• Add the eggs, vanilla, cinnamon and salt. Mix well. Add the ground almonds and sift in the flour and baking powder. Mix Combine the bicarbonate of soda with the milk and stir it through the batter. Pour the batter into the prepared tin and bake for 45-50 minutes at 180°C.

• Remove as soon as a skewer inserted in the middle comes out clean.Turn out to cool before wrapping in wax paper and foil.The bread will last several days in an airtight container.
