Curried cauliflower soup



A delicious warming, wintery starter that takes only a few minutes to prepare and cook.

1 onion
1 head cauliflower
3 garlic cloves
2 tbsp butter
1 tsp ground ginger
2 tsp ground cumin
1 tsp ground cilantro
2 tsp turmeric
0.5 tsp cayenne pepper
32 fl oz vegetable stock
Carrot matchsticks and fresh cilantro to garnish

1. Roughly chop the onion, cauliflower and garlic and cook in the butter for 5 minutes.

2. Stir the spices in for 2 minutes then add the stock. Bring to the boil then simmer for 10-12 minutes, until the cauliflower is soft.

3. Blend the soup into a smooth puree and season with salt and black pepper to taste.

4. Garnish with the carrots and cilantro.

Makes four servings.
Each serving has 130 calories.
