Have yourself a superb italian pasta that you can whip up in a cinch!
What you need:
a small package of pasta of your choice, if you prefer healthier, choose wheat pasta
2 tablespoons olive oil
2 to 3 cloves of garlic, crushed
1 tablespoon of chopped black olives
1/2 teaspoon capers
1 cup tomato sauce
1/2 cup tomatoes, chopped and peeled
basil leaves, chopped for garnish
Parmesan cheese for garnish
What to do:
Prepare pasta of choice according to package directions.
Meanwhile, heat olive oil. Add garlic. Saute for a couple of minutes.
Add olives and capers.
Pour tomato sauce and tomatoes. Cook until sauce is thick. Add cooked pasta and mix well.
Make a large envelope out of an aluminum foil. Set it in a baking pan and put pasta inside. Put basil leaves and put inside the envelope with the pasta.
Seal by pinching foil ends together.
In a pre-heated 400 °F oven, bake for a few minutes or until heated through.
Tear open the foil, transfer to a serving dish and top with Parmesan cheese.
