Delicious summer dessert.
Ingredients:
• 10.5 oz (300g) potatoes
• 3.5 oz (100g) flour
• 1 egg yolk
• 1 tsp butter
• 1/2 tsp salt
• bread-crumbs
• plums
• cinnamon
Step 1:
Put the potatoes to boil in their skin in salty water. When ready, peel and mash them and let them cool off. Meanwhile, put a large pot with salty water to boil on the stove.
Step 2:
In a skillet, pour 1 tsp of oil and let it heat. Over it, add the breadcrumb and leave it on low heat until the color darkens, stirring occasionally.
Step 3:
To the mashed potatoes, add the flour, the egg yolk, the butter and some salt. Knead well until everything becomes a dough, then spread it as a sheet as thin as possible.
Step 4:
Cut the dough in squares. In one square, place a whole plum/one half, as you choose, and sprinkle some cinnamon. Make balls from the dough to cover the plum entirely.
Step 5:
When the salty water is boiling, add the plum balls; don't put all of them, just a few that have enough space on the bottom of the pot. Let them simmer until they rise to the surface, plus one more minute.
Step 6:
Remove the dumplings, put them in a large colander and keep them under running warm water a few seconds.
Step 7:
Roll each dumpling in the fried breadcrumbs and move on to the next.
Step 8:
Plum dumplings can be served warm or cold, with plum or vanilla sauce and cinnamon.
