Apple flapjacks


Serves6-8. Preparation time 5 minutes, plus time to rest the batter. Cooking time 10 minutes.

Wholewheat flour gives these flapjacks a nutty taste. Try banana instead of apple - it's just as good.

1 cup wholewheat flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
pinch of salt
1 large egg
1 tablespoon honey (or sugar)
1 cup thick amasi or buttermilk
2 tablespoons melted butter, plus extra for frying

For the apples
2 apples
4 tablespoons honey
4 tablespoons butter


• Combine the flour, baking powder, bicarbonate of soda and salt in a big bowl.

• Mix the egg, honey, amasi and 2 tablespoons of melted butter in a separate bowl.

• Add the wet ingredients to the dry ingredients and mix well. Allow the batter to rest for 15 minutes.

• Slice the apples into rings and fry in honey and butter until al dente.

• Grease a hot pan with a small pat of butter. Put an apple ring in the pan and pour about 4 tablespoons of batter per flapjack on top. Turn the flapjack as soon as bubbles form on the top and the bottom is golden brown. Serve with extra honey and plain yoghurt.
