Serves 4. Preparation time 5 minutes. Cooking time 20 minutes.
To me, this milky tea is synonymous with camping at open-air music festivals where ifs often dished out from large pots by men in white dresses. There are two crucial ingredients when making chai tea: full-cream milk (the fat brings out the flavour of the spices) and strong black tea.
2 cups full-cream or evaporated milk
2 cups water
4 teaspoons loose black tea (strong and cheap)
0.5 -1 teaspoon chai spice mix (below)
4-8 teaspoons light brown sugar
For the chai spice mix
10 tablespoons ground black pepper
10 tablespoons ground ginger
5 tablespoons ground cinnamon,
5 tablespoons ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
• Combine all the ingredients for the spice mix and store it in an airtight container. (Or use the same amounts of whole spices and grind them.)
• Put all the ingredients except the sugar in a pot and bring to a boil.
• Stir to prevent the milk from burning, then set aside for 10 minutes. Stir in the sugar and add more spices and sugar to taste. Slowly bring the tea to a boil again.
• Pour the tea through a strainer and enjoy!
