Serves 4. Preparation time 5 minutes. Cooking time 20 minutes.
Prepare a nut and sultana mix and pack it in a ziplock bag for the camping pantry - it will brighten up any breakfast. The Amarula can also be swapped with whisky.
2 tablespoons butter
1 grated apple (optional)
pinch of ground cinnamon
1,1/2 cups oats (not instant oats)
pinch of salt
1,1/2 cups water
1/2 cup cream
1/2 cup Amarula
For the nut and sultana mix
1/2 cup golden sultanas
1/4 cup almond slivers
1/4 cup pumpkin seeds
1/4 cup coconut
• Melt the butter in a pot. Add the apple, cinnamon, oats and salt, and stir well. Add the water and cream and bring the mixture to a boil. Simmer for 8 minutes.
• Remove from the heat and stir half of the Amarula into the porridge. Set aside the pot with the lid on for another 10 minutes. If the porridge is too thick, you can add water and gently reheat it.
• Serve the porridge hot with some of the nut and sultana mix. Drizzle over the rest of the Amarula.
