Serves 6 Preparation 1 hour Cooking time 30 minutes
500 g dried fruit
1 -2 cups boiling water
1 cup sugar
2 tablespoons butter
1 cup self-raising flour
pinch of salt
1/2 cup milk
• In a pot, cover the dried fruit with the boiling water and soak for about 10 minutes or until soft.
• Add the sugar and 1 tablespoon of butter. Simmer until a syrup forms - add more water if needed.
• Combine the self-raising flour and salt, and rub in the remaining butter. Add the milk and mix until a soft dough forms.
• Drop spoonfuls of the dough into the simmering mixture. Put the lid on and simmer fo 10-15 minutes or until the dumplings have swelled.
