A hearty, cooked brunch meal that is easy to cook in one pan. The apple adds a lovely sweet flavor to the dish.
1 sweet potato
1 medium onion
1 red pepper
2 apples
8 sausages
2 tbsp coconut oil
4 eggs
1. Preheat the oven to 350 F.
2. Peel and grate the sweet potato, rinse in a colander and wring out through paper toweling.
3. Thin slice the onion, pepper and apples and mix with the sweet potato. Season with salt and black pepper.
4. Cut the sausages into chunks and fry in the oil, in a large skillet, for 5 minutes.
5. Add the potato mixture in an even layer and cook for 5-10 minutes until the vegetables are soft and the sausage is cooked through.
6. Transfer the hash to an ovenproof dish and make a well near each of the corners. Carefully, break an egg into each well then bake the dish for 5-10 minutes until the eggs are cooked to your liking.
Makes four servings.
