Meatballs soup

A delicious soup you can serve to your friends or guests . Easy and fast to cook , 45 minutes – 50 minutes cooking time.

Ingredients:

FOR THE MEATBALLS:
• 500 gr of chicken minced meat
• 1 cup of rice
• 2 eggs
• parsley finely chopped
• salt
• pepper

FOR THE SOUP:
• 2 carrots
• 2 onions
• 2 bell peppers ( one red and one green )
• 5 tomatoes
• 2 potatoes
• lovage

Step 1:
After cleaning and washing the carrots, onions, peppers, tomatoes and potatoes chop them quite finely and put them to boil in a 6 liters pot , where you add 3 liters of water. Meanwhile start preparing the meatballs.

Step 2:
Mix well the ground meat with 2 eggs, the cleaned and washed rice, the chopped parsley, salt and pepper.

Step 3:
After the vegetables are boiled , add some soup flavours and let them boil a few more minutes.

Step 4:
Use the tablespoon to get some meat mixture and make patties in the form of balls. Add the meatballs in the pot with vegetables and soup.

Step 5:
Let it boil at moderate heat for about 40-50 minutes. When they are tender turn off the heat and add chopped lovage.
