Honey-roasted onion with haloumi


Serves 4. Preparation time 5 minutes. Cooking time 45 minutes.

4 onions
8 sprigs of thyme
8 tablespoons butter
8 teaspoons honey
juice of 1 lemon
2 x 250 g pieces of haloumi
4 tablespoons teriyaki sauce

• Cut the onions in half and place each half on a piece of foil large enough to wrap it in. Divide the thyme, butter and honey between the onion halves and squeeze half the lemon juice over. Close the foil around the onions and wrap each piece in another layer.

• Cook the parcels on a grid over hot coals for 40 minutes or until very tender, turning occasionally. (You could also bake the onions in a container covered with foil.)
