
Serves 4. Preparation time 5 minutes. Cooking time 20 minutes.
500 g mince
1 red pepper, chopped
1 onion, chopped
2 tablespoons oil
4 tablespoons parsley, chopped
1 head of lettuce
1 cucumber
pita bread
For the dressing
1/4 cup hoisin sauce
2 cm ginger, grated or 1 teaspoon dried
2 tablespoons crushed garlic
1-2 tablespoons chilli sauce or chilli flakes
2 tablespoons white wine vinegar or lemon juice
2 tablespoons soya sauce
• Fry the mince, red pepper and onion in some oil until browned.
• Combine all the ingredients for the dressing and pour over the meat in the pan. Simmer for 2 minutes then remove from the heat and sprinkle with chopped parsley. Allow the mince to cool down to room temperature. (You can store it in the fridge for up to 4 days.)
• Cut the lettuce into strips and cut the cucumber into small cubes. Combine in a bowl and spoon the mince on top. Serve with triangles of hot pita bread.
