Makes 4. Preparation time 5 minutes. Cooking time 40 minutes.
The caramelised onions are this sandwich's secret weapon.
4 tablespoons butter
4 onions, thinly sliced
2 tablespoons brown sugar
2 tablespoons vinegar
1 bottle beer (330 ml)
8 strips of bacon
8 slices of bread
butter
a handful of grated cheese (gruyere works well)
• Heat the butter in a pot and fry the onions for 5 minutes or until translucent. Add the sugar, vinegar and beer, and simmer over a low heat for about 30 minutes or until the beer has evaporated and the onions have caramelised. Take your time!
• Fry the bacon until crisp and drain on kitchen paper
• Butter the bread on 1 side and put 2 strips of bacon, a spoonful of onions and some cheese on the unbuttered side. Close with another slice of bread - buttered side feeing out.
• Braai in a hinged grid over medium-hot coals until the bread is golden brown and the cheese is melted, Or melt some butter in a pan and fry on both sides.
