Sandwich your gourmet burger between vegetables rather than bread then round off your meal with coleslaw and sweet potato fries.
For the BBQ sauce:
3 onions
4 cloves garlic
24 fl oz orange juice
4 tsp dijon mustard
6 tsp ground ginger
3 tsp mild/hot chili powder
3 tbsp parsley
3 cans chopped tomatoes
4 tsp paprika
4 garlic cloves
1 onion
1 lb ground beef
1 large eggplant
2 beef tomatoes
4 large flat mushrooms
1. Fine chop the onions and garlic.
2. Whisk the orange juice, mustard, ginger, chili and parsley together in a saucepan.
3. Add the onions, garlic and tomatoes and bring to the boil. Simmer for 10 minutes, or longer if a thicker sauce is required.
4. Preheat the oven to 425 F.
5. Slice the eggplant and tomatoes into ½ inch thick rounds.
6. Brush both sides of the mushrooms and eggplant slices with olive oil and cook for 20-25 minutes.
7. Finely chop the garlic and onion and, using your hands, mix into the beef along with salt and black pepper. Shape the meat into 4 patties and arrange on a high sided roasting dish. Cook for 10-20 minutes until cooked through.
8. Use the mushroom as a base and top with the meat, eggplant then tomato. Serve with the BBQ sauce on the side.
