This meal takes virtually no cooking, making it a perfect option for a dinner party when you don’t want to be chained to the kitchen all night.
14 oz tomatoes, any variety
2 avocadoes
1 red pepper
7 oz scallions
1-2 chilies, hot or mild depending on taste
Bunch of fresh cilantro
Juice of 1 lime
8 oz pancetta
1 tbsp olive oil
4 x 5-6 oz tuna steaks, about 1 inch thick
1. Roughly dice the tomatoes, avocadoes and pepper. Slice the scallions and chilies. Chop the cilantro.
2. Mix the tomatoes, avocadoes, pepper, scallions, chilies and cilantro together in a bowl and add the lime juice.
3. Dice the pancetta and fry it in the oil for 5 minutes, stir into the salsa.
4. Using the pancetta pan, cook the tuna steaks for 1-2 minutes on each side until the outside is seared but the middle is still pink.
