Who said meatballs were boring? Check out the flavor of these and serve them up with steamed green vegetables.
1 onion
2 garlic cloves
1lb ground pork
3 oz ground beef
1 beaten egg
1 tbsp paprika
2 tbsp coconut oil
4 slices smoked bacon
5 shallots
10 fl oz beef stock
2 tbsp Worcestershire sauce
3 tsp thyme
1 tbsp tomato paste
1. Finely dice the onion and garlic. Using your hands, mix them with the pork, liver, egg and paprika with some salt and black pepper then shape into golf ball sized meatballs.
2. Heat the oil in a large, lidded skillet and cook the meatballs for 5 minutes, until they are browned all over.
3. Dice the bacon and peel the shallots and add to the pan for a further 5 minutes until the meatballs are cooked through and the bacon is cooked to taste.
4. Add the stock, sauce, thyme and paste to the pan and cover. Cook for 30 minutes then remove the lid for a further 15-30 minutes until the sauce has thickened.
Makes four to six servings.
