Cauliflower Crust Pizza



This pizza base can be topped with anything you desire or simply covered with garlic butter for a side dish.

For the base:
1 cauliflower
4 oz ground almonds
2 eggs

For the topping:
2 red peppers
1 tbsp olive oil
4 tbsp tomato paste
4-6 oz mixed grape tomatoes and olives
½ portion of caramelized onions
1 portion of pesto
2 tbsp pine nuts

1. Preheat the oven to 400 F.

2. Cut the cauliflower into florets and use a food processor to blitz until they look like breadcrumbs.

3. Put the cauliflower into a microwaveable bowl and cover with plastic wrap. Cook for 5-7 minutes until soft. Allow to cool for a few minutes.

4. Mix the cauliflower, almonds and eggs into a dough using your hands, then pack into a greased pizza pan. Bake for 15 minutes until beginning to brown.

5. Slice the peppers into strips then fry in the oil for 5 minutes until softening.

6. Halve the grape tomatoes and olives.

7. Spread the paste over the pizza base.

8. Top the pizza with the cooked peppers, grape tomatoes and onions.

9. Drizzle the pesto over the pizza.

10. Sprinkle over the pine nuts to finish.

11. Bake the pizza for a further 10 minutes until everything is heated through.

Makes four servings.
Each serving has 523 calories.
