Mini-ham quiche


Often we heard about canapes commonly served as appetizers, we also have Quiche, we call it bite size custard pie, mini-bites, etc.

What you need:
For the crust
1/3 cup cold butter, cubed
1/3 cup cold cream cheese, cubed
1 cup flour

In a bowl, beat butter and cream cheese until smooth. Add flour and blend on low-speed until mixture forms into a ball. Press dough on bottom and sides of tartlet molds. Chill until needed. Meanwhile, make the filling.

For filling
1 tablespoon butter
1 medium onion, sliced
1/2 cup chopped farmer’s ham
1/2 cup grated cheddar or quick-melting cheese
1/4 cup heavy cream
1/4 cup milk
1 egg
salt and pepper to taste

What to do:
Preheat oven to 400°F.
In a large pan, melt butter over medium heat. Sauté the onion until caramelized, about 10 minutes.
Add ham and cook for 2 minutes. Remove from heat and cool slightly. Place a teaspoon of ham mixture on each tartlet crust. Sprinkle with cheese on top.
Combine cream, milk and egg and whisk till blended. Lightly season with salt and pepper. Spoon mixture over each tartlet.
Bake for 30 minutes or until top is golden brown. Cool slightly, then carefully unmold tartlets.
Arrange on a serving platter and serve.
Serves 6. Preparation time 20 minutes. Baking time 30 minutes.

Tip: Ham, bacon and cheese are usually salted so only small amount of salt is needed to season the egg mixture.
